Born in Lyon, France, Chef Farid Zadi started his culinary education
as a teenager working at the renowned Castel de Valrose, just north
of Lyon in the idyllic village of Montmerle sur Saone . He graduated
from École Hôtelier Auguste Escoffier. Zadi’s early
career included stints at the then-three-starred Chez Jacques Cagna
in Paris; Bouchon aux Vins and La Machonnerie back in his native
Lyon; Dryades Resort Spa in Limousin, France; Frederick’s of London;
and Silver Darlings in Aberdeen, Scotland.

December 6 - 58th Annual "Les Amis d'Escoffier Society of
Los Angeles" Dinner performed by Andreas Nieto, Executive Chef
Westin Bonaventure Hotel and Dr. Joel Fischer, Master Sommelier.
Nieto was recognized as Chef of the Year by Le Toque Blanches International
in 2001 and again in 2002 by the American Academy of Hospitality
Sciences. Esquire magazine noted Nieto’s talents by naming ‘Breeze’
Best New Restaurant while he was at the helm. Wine Spectator profiled
Nieto in a three-page spread in 2002. Additionally, Nieto was awarded
the James Beard Dinner and Award, as well as the Best New Chef by
Food & Wine Magazine in 2001
Dr. Fisher is a member of the Society of Wine Educators, The Circle
of Wine Writers (UK) and was awarded a Wine Enthusiast Media Scholarship
for 2005 at the Culinary Institute of America. He is the author
of the Wine Work Book now in its 6th edition. He is the President
and CEO of the LA Winefest and the SCV Winefest.

About the W. Los Angeles Fisher
House Foundation:
“There’s no place like home,” said
Dorothy in the Wizard of Oz. This may be true, but the West Los
Angeles Fisher House Foundation has strived to create a “home away
from home” for Veterans’ families. The Fisher House is a free place
for Veterans’ families to stay while their loved one is undergoing
care at the VA facility. It provides the families some of the comforts
of home such as home cooked meals, a garden and a library. In addition,
they can bond and empathize with other families experiencing the
same emotions. Meanwhile, the Veteran also benefits by having the
physical and emotional support of his/her family during treatment.
How can this be free? Well, the West LA Fisher House
Foundation, a 501 (c) (3) non-profit organization has raised just
under $3 Million and hopes to reach their fund raising goal of $3.5
Million before the end of this year. Our success was due to community
support from individuals, families and businesses. Although we can’t
thank all of our supporters, it’s important to thank Former American
Legion Post Commander Mr. Louis Cozolino and the members of Pacific
Palisades Post 283 who made a generous contribution totaling $2.15
Million. There are no words that can thank the Post and its members!
Although there’s no place exactly like your home,
now there’s a “home away from home” for Veterans’ families.

Fisher House Program Origin:
Mrs. Pauline Trost, wife now Admiral Carlisle Trost,
US Navy, Retired, and former Chief of Naval Operations is credited
with giving Zachary and Elizabeth Fisher the idea for the Fisher
House program in 1990. The first Fisher House opened with President
and Mrs. Bush joining the Fishers and the Trosts at the dedication
ceremony.
About: "LA's Spotlight on Childhood Hunter"
The ACF-LA's Chef and Child Foundation's
Childhood Nutrition Day, called "LA's Spotlight on Childhood
Hunger," will take place Saturday, Oct. 16, 2010, at the Los
Angeles Convention Center. There will be a Kid's Healthy Cooking
Contest and a Benefit Concert to bring awareness to childhood hunger,
malnutrition and obesity in America, and we are inviting many at-risk
and disadvantaged children to participate. Furthermore, most of
our proceeds will go to our adopted charity, the West
Los Angeles Fisher House Foundation. This foundation provides
temporary housing for families of veterans while they undergo longterm
care.

The Los Angeles
Convention Center, is hosting the Chefs de Cuisine of California,
American Culinary Federation Chapter Meeting on May 20 from 3PM
to 5PM. I encourage your support and participation.
Please join us as we provide an afternoon of fun and enjoyment.
We are working hard to rebuild the chapter which would be beneficial
to all of us. We have seating for 100 and plenty of standing room.
Arrive early or late, no matter!
Social hour includes terrific sustainable hors d' oeuvres paired
with wonderful Cakebread Chardonnay
and Lancaster Merlot
wine or beer.
The meeting will be in room 153 A, B and C on the first floor.
Afterwards we will head over to LA Live for an informal gathering
at the bar. I have attached a flyer

Cuisine Association of California monthly meetings. We are excited
to begin the new year with our first meeting hosted by Executive
Chef Rick Wineman at the Los Angeles Convention Center on February
25, 2010 from 3-5 pm.
We hope you will get involved and we invite you and your guests
for an afternoon of fun, seeing old friends and making new friendships.
The Los Angeles Chapter has been in existence sine 1923 and has
included some of the finest world renowned chefs, educators and
food service business professionals.
Our March meeting will be at the Lakeside Golf Club in Burbank hosted
by Executive Chef Neil DeFries.

In order to nominate a chef please email the chefs contact information, and three reasons why you feel your nominee should be a candidate and anything else you would like to add a short bio for example – and/or other accomplishments.
The deadline for submitting is August 31st. Email your submission to
President@acfla.org
Once the Chef of the Year committee has qualified the nominees the membership will be asked to vote. The Chef with the most votes will become the 2008 ACF / LA Chef of the Year.

ACF WESTERN REGION CONFERENCE
The ACF 2006 Western Region Conference is right around the corner - February
2-6 to be exact. February's a great time to escape the cold winter weather and head for
"Paradise" as the 2006 Conference will be held on the Gold Coast of Hawaii Island.
Hosted by the ACF Kona-Kohala Chapter Chefs de Cuisine, the 2006 conference location
is slated for the Hilton Waikoloa Village
Resort.
Filled with educational clinics, specialty sessions featuring unique Hawaiian
products, competitions, and regional award presentations, the 2006 Conference will be a
highlight of your new year. Register early as rates are $225 for early registration until

Whitney Werner Receives
Presidential Medallion from ACF President Ed Leonard in
Colorado ! Whitney Werner, CEC, is Chef of the Year for the
ACF Chefs de Cuisine Association of California 2002. Currently
executive chef at The Beach Club in Santa Monica, Calif. Chef Werner
began working in restaurant kitchens at the age of 15 and brings 25
years of experience to our chapter. He serves as chapter second vice
president, hosts the Escoffier dinner, and holds classes for junior
members. A graduate of The Culinary Institute of America, he started
in pastry as part of the opening team of the Ritz-Carlton, Laguna
Niguel. He opened and operated restaurants for the Hilton Hotel
Corporation nationwide and worked at the Ambassador Hotel in Taipei,
Taiwan, updating menus with current culinary trends. Chef Werner was
awarded four stars for his French-Russian cuisine at Le Bel Age
Hotel in Hollywood before opening his own restaurant, Whitney’s,
on Montana Avenue in Santa Monica, where he enjoyed many successful
years of attracting a high-profile, celebrity clientele. Chef Werner
has been a culinary educator at the Los Angeles Culinary Institute.
Currently Whitney is known for bringing his "Whitney's"
concept to The Beach Club in Santa Monica with resounding success.
Chef Whitney is also a driving force for our chapter in the Chef of
the Year Los Angeles Culinary Competitions. Providing boundless
passion and vision! Well done and congratulations Chef Whitney!

...And the Hermann G. Rausch Chefs Life Time Achievement
Award goes... to Richard L. Morgan,CEC,AAC
Among his many accomplishments, Chef Richard was an
Executive Chef years ago at the Brown Derby in Los Angeles and is
also the coordinator of the "Original Cobb Salad" which
the Brown Derby was famous for.
Chef Morgan recently gave a demonstration of the
"Original Cobb Salad" for culinary students at the Art
Institute in Santa Monica. Click

behalf of our chapter we are so honored to have among our membership
Chef Richard Morgan. As many of us know chef Richard's life time
dedication to the culinary profession and fulfilling the role and
mission of American
Academy of Chefs is without question. An excellent chef, a kind
and personable man, a teacher, a mentor, who shares his knowledge
and wisdom freely to those who have had the fortune of meeting him.
On behalf of all of us we and our longest standing chapter member,
chef Richard L. Morgan,. congratulations and God bless you always.
This award, formerly the Hermann G. Rusch
Humanitarian Award, honors chefs who have demonstrated the highest
level of commitment to both ACF and the culinary profession. Such
chefs, through their involvement with and contributions to ACF and
our craft, have advanced the culinary profession and ensured the
enrichment of students, our members, and those in our profession.
Any one of these candidates is worthy to carry on the proud
tradition of the chef for whom this award was named in 1993,
Hermann G. Rusch, AAC (1907-1997).(more)

ACF Announces Candidates for 2004 Regional
Chefs of the Year
The ACF Chef of the Year Award recognizes an outstanding
culinarian who works and cooks in a full-service dining facility.
This person has demonstrated the highest standard of culinary skill,
advanced American cuisine, and given back to the profession through
the development of students and apprentices. The following are
regional candidates for ACF's national Chef of the Year award, which
will name the U.S.A.'s Chef of the YearTM
for 2004.
One candidate from each region will be chosen as this year's
Regional Chef of the Year and announced at the respective regional
conference. The four finalists will compete in a cook-off at the
2004 ACF National Convention in Orlando, Fla., in July. The awards
are sponsored by UBF Foodsolutions North America.

The 2004 Installation Dinner at Los Angeles Mission
College was a success!
Excellent cuisine was prepared by Chef Rudy Garcia
and his students, the dinner was a fine demonstration by a
remarkable chef educator and the hard working, dedicated students
under his care.
Thank you to everyone for supporting our event. We appreciated your time
and effort to be with us for dinner last evening.

Responsibly Following "Mad Cow" Incident

(ACF), Inc., today issued a statement to all professional chefs
concerning the first incident in the United States of a cow
suspected of being infected with bovine spongiform encephalopathy (BSE),

On October 20th, the ACF/Chefs
de Cuisine Los Angeles held it's annual Presidents Ball in Los
Angeles. The gala dinner featured a video premier presentation
of our 1st Chef of the Year Los Angeles competition as well as the official announcement of this
years Los Angeles Chef of the Year award, more details and pictures
to come..
The Los Angeles Chef of the Year Award
hosted by our Los Angeles Chapter is the
first chapter to change from a
popularity vote to an intense "iron chef style"
live cooking competition. The new yearly competition is a positive
change and well regarded event for Los Angeles area chefs, restaurants,
hotels, caterers, educators and culinary community. Nominees
are a diverse
field of highly regarded chefs, many from well known local
establishments, hotels and the educational community. Nominations
are open for Los Angeles Chef of the Year 2004 no membership
required. The Los Angeles
competition is a media intense event for participants, sponsors and
the culinary community as well as an excellent educational

results: "One
of the highlights on the show floor was the American Culinary
Federation’s First Annual Chefs de Cuisine Association Culinary
Competition. Winning first place in the 2003 Western Foodservice
& Hospitality Expo-LA Chef Table Luncheon was Team Desert
Springs led by Steve Ferraro of the J.W. Marriott Desert Springs
Resort & Spa, Palm Springs, CA. The 2nd place team
was Team Keoki, led by Joseph Orate from Grossmont College. Team
Keoki represented restaurants in the San Diego, Orange Coast and Los
Angeles regions. The 3rd place team was Team Beach led by
José Leut Jimenez from the Santa Monica Beach Country Club. Many of
the chefs that participated will also go on to the Los Angeles Chef
of the Year Awards, which will be announced in October 2004 at the
